Fried Rice with Oyster and Soy Sauce

 This is a very simple dish that does not need much explanation. In high school and college, whenever my parents were too busy to cook, I would make fried rice out of whatever was available. I practically mastered the art of what I'd like to call "Whatever Fried Rice." I usually put soy sauce in my fried rice but JB recommended I put oyster sauce and soy sauce together. This sounded pretty gross until I made yakisoba, which required an oyster sauce, soy sauce, and sake mix and that sounded gross but tasted great. So on another one of my starving with nothing to eat and no one to cook for me days, I made fried rice with oyster and soy sauce and chili garlic sauce because I need spice in my life but this is totally optional.
  1. use rice cooked and left in the refrigerator overnight
  2. pick a protein (leftover beef, chicken, shrimp, sausages, or spam have been my past favorites)
  3. add veggies. If you have a frozen bag of veggies that works great. If not, put in what you can get, I only had green onions today
  4. make scrambled eggs and set to the side
  5. Remember to cook all ingredients in a pan or wok separately and set aside
  6. In a small bowl, mix oyster sauce and a lesser portion of soy sauce. Eyeballing portions is ok
  7. Add your rice to the oiled wok, add the sauce, make sure it coats your rice evenly, cook on medium
  8. Add everything else and stir until evenly heated
  9. turn off heat, garnish with green onions
Congratulations! You have successfully created Whatever Fried Rice, the staple of all college student diets, next to instant ramen which is just a slow sodium death...
Oyster sauce and soy sauce combined make for a tasty seasoning and I am going to try this combo on other dishes to see how many things it actually works on.

  3. I LOVE FRIED RICE! I've been searching for a good fried rice recipe forever, I'm definitely going to try this! Do you use long grain white rice or jasmine rice?? Great blog by the way!

    Any rice will work. I'm not sure what type of this one was made from. Usually we prefer jasmine. Long grain rice from Indian stores makes for an interesting texture too.

  5. I'm in love with fried rice. It's on of those dishes where anybody can make, but its hard to perfect. There is always something that can make it better!
