Kale and Persimmon Salad - Kale in Alfredo Pasta

After my recent kale fails, I had to go back to something safe for the rest of the kale. I packed myself a colorful salad for a study marathon at the library. Kale salads are better when the leaves are massaged but I couldn't pre-massage it because it would get soggy by the time I ate it. I also couldn't just stick my hands into my salad at the library and massage it in public so I ate the crunchy kale as is.

Home grown kale torn to bite sized pieces. Home grown grape tomatoes. Shavings from home grown persimmons. Small container of Kraft brand robusto Italian dressing. Delicious and I think my liver feels cooler and my acne is gone!

Some time ago, I also put kale into my shrimp and alfredo pasta. It works great. I think of kale as a good spinach replacement in many dishes. It's just a little tougher so you have to cook it longer or blanche before adding.
